The condiment is an American version of a mixed Indian pickle. The <a href=\"http:\/\/en.wikipedia.org\/wiki\/Piccalilli\" target=\"_blank\">Wikipedia entry<\/a> on piccalilli is wrong. It states that piccalilli is not commonly served in the South, when, in fact, both the word and recipes for Indian pickles entered America via the slave trade, which was centered in Charleston. It is generally made in the South with green tomatoes. The following recipe is from <a href=\"https:\/\/www.hoppinjohns.com\/index.php?page=shop.product_details&amp;flypage=flypage.tpl&amp;product_id=4&amp;category_id=1&amp;option=com_virtuemart&amp;Itemid=77\" target=\"_blank\">my book on Lowcountry Cooking<\/a>, but you needn&#8217;t follow the instructions exactly as long as you keep the proportions the same. We didn&#8217;t have enough bell peppers and we didn&#8217;t have celery or mustard seeds, but we used powdered mustard, a little less sugar, and added some Dr. Brown&#8217;s CelRay soda we had on hand! We also added a variety of peppers from the garden. The relish is delicious.<\/p>\n<p>I like to serve it with composed rice dishes, with greens, with cowpeas or butterbeans, or stirred into potato salads. It&#8217;s also a good accompaniment to grilled poultry, pork, and oily fish.<\/p>\n<div id=\"yui_3_7_2_1_1379265762856_16034\"><strong>Piccalilli, or Green Tomato Relish<\/strong><\/div>\n<div><strong><\/strong>Choose rock-hard, unblemished, very round fruits with no sign of red for this delicious relish, a favortie local embellishment for rice dishes, roast meats, and vegetables.<\/div>\n<div><\/div>\n<div>5 pounds green tomatoes, cored and ground1 pound green and red bell peppers, ground (2 greens and 1 red)<\/div>\n<div>1 pound onions, ground (about 3 average onions)<\/div>\n<div>a fresh hot pepper or two, such as jalape\u00f1o, if desired<\/div>\n<div>1\/2 cup salt<\/div>\n<div><\/div>\n<div>Grind and mix all the vegetables together and sprinkle with the salt. Allow to sit for three or four hours, then drain well in a colander lined with cheese cloth, squeezing all the excess moisture out of the mixture.<\/div>\n<div><\/div>\n<div>For the pickle mixture: \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0\u00a0<a href=\"https:\/\/hoppinjohns.net\/WP_Johns\/wp-content\/uploads\/2013\/09\/DSCN4996.jpg\" rel=\"lightbox[3897]\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-3901\" title=\"green tomato relish\" src=\"https:\/\/hoppinjohns.net\/WP_Johns\/wp-content\/uploads\/2013\/09\/DSCN4996-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/hoppinjohns.net\/WP_Johns\/wp-content\/uploads\/2013\/09\/DSCN4996-300x225.jpg 300w, https:\/\/hoppinjohns.net\/WP_Johns\/wp-content\/uploads\/2013\/09\/DSCN4996-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/div>\n<div><\/div>\n<div>4-1\/2 cups vinegar<\/div>\n<div>1-1\/2 cups sugar<\/div>\n<div>2 tablespoons mustard seed<\/div>\n<div>1 tablespoon celery seed<\/div>\n<div><\/div>\n<div>Simmer\u00a0 the above\u00a0 ingredients for 15 minutes, add the vegetable mixture, bring to a boil, and add to sterlized jars. Seal.
